A few weeks back, a reader named Jordan commented on a pizza post, recommending I visit 00100, a pizza al tagio joint in Testaccio just off Piazza Santa Maria della Liberatrice. Never one to turn down a carb related suggestion, I visited 00100 straight away. I got there at 12:30, just as they were preparing for the lunch rush. The counter was stocked with steaming pizzas just out of the oven. Their toppings ranged from the traditional shredded potato slice (above) to the more innovative imported Stilton and port reduction combo. The ingredients are all top-notch and there is a deliciously harmonious union between the airy dough and quality toppings.
In addition to their al taglio selections, they also offer creative suppli’ (we tried one filled with amatriciana sauce) and trapizzini. The latter are wedges of dough stuffed with recipes typical of Rome’s cucina povera like trippa alla romana, la coratella (sauteed heart, lungs, and liver), coda alla vaccinara (braised oxtail), to name a few. There are also more than 60 Italian and Belgian beers to choose from. I am seriously considering moving upstairs from this place.
