Monday night I met my friend Marlène for dinner at Metamorfosi, a place I wrote about when it first opened in November 2010. We had an amazing dinner, the best meal yet from the kitchen of chef Roy Caceres and sous chef John Regefalk. You may know John from his own blog Caput Mundi Cibus or his guest posts on Parla Food. He is a close friend—and Marlène’s boyfriend—so we didn’t exactly dine incognito. We enjoyed a steady parade of outstanding dishes from the new menu, which pleased and surprised with its texture contrasts, lively color palate and elegant flavors. Here’s what we ate:

Oxtail pop.

Smoked eel with polenta.

Sourdough bread and spreadable olive oil.

Red shrimp with foie gras mayonnaise, green strawberries, turnip slivers, and hijiki.

Raw red shrimp with avocado and wild oyster cream.

Spinach granita with mozzarella whey gel and olives.

Cuttlefish “gnocchi” with potatoes and peas.

Pasta filled with butter and 36-month aged parmesan topped with truffle shavings.

Wagyu beef with a parsley-garlic sauce.

Fassona beef heart with aromatic herbs, avocado and aji panca.

“Scarpetta” dessert: mascarpone cream and strawberries served with a side of bread for soaking up the sauces.
