Nic Roome’s madeleines have become my latest edible obsession. As far as I can gather, he runs a small operation out of his house and is a recent convert to the world of artisan food production, having left a career at Burberry to pursue baking. I was first introduced to Roome’s madeleines by my friend Kitty Travers, my official London food guru, at Monmouth Coffee’s Bermondsey location.
