Cauliflower, Sea Urchin & Apple Cider

On Friday I wrote about the disappointing salad I ate at Hearth in NYC. That post focused on what was bad about my meal, overlooking what was great about it (sometimes it takes the words of a childhood friend and an emoticon to remind me).
The two standout dishes were the bookends of the meal, cauliflower soup with sea urchin roe and apple cider donuts with maple syrup ice cream. The soup’s silky consistency bathed the firm, buttery, and slightly salty roe creating a complex marriage of flavors and textures. The apple cider donuts were a bit more straight forward: hot, fried dough with sugary ice cream on the side. Hot and cold components, sugar and more sugar. It just makes sense.
