
Dolma is the generic term for a Mediterranean dish that is made by stuffing vegetables or leaves with fillings. While shopping at the Ekolojik Pazar in Istanbul’s Bomonti district last weekend, I spotted these hollowed out dried veggies that are used to make dolma. They are rehydrated, stuffed with filling (usually rice or meat), and cooked slowly so the flavors blend together.
