Künefe is kadayif (shredded phyllo dough) stuffed with cheese, fried in butter, soaked in syrup and topped with clotted cream. The künefe I had at Köşebaşı in Istanbul’s Levent district last week (on two separate visits) is one of the best things I have ever eaten. It reminded me of Sardinian seadas, a deep fried cheese dessert soaked in honey.
