Pizza margherita.

It was only published a week ago, but my list for The Guardian of “10 of the best pizza places in Rome” is already out of date. Last week, a new pizzeria called Tonda opened on Via Valle Corteno, just off the Via Nomentana. Tonda is the work of Stefano Callegari and Antonio Pratticò of Sforno and 00100 fame. For anyone who follows my carbohydrate intake, it comes as no surprise that I cycled out to Tonda the first chance I got. My friend Jessica joined me and we had quite a delightful meal.


Cacio e pepe pizza.

Tonda combines elements of Sforno and 00100. For example, there are trapizzini as you would find at 00100, and the famous Greenwich (mozzarella, stilton, and port reduction) and cacio e pepe (pecorino and black pepper) pies that you find at Sforno. There is an ample selection of fritti, including what must be Rome’s best fiori di zucca.


Hand crafted brick oven.

The brick oven is a hand crafted, wood burning, Neapolitan creation of the inimitable Stefano Ferrara. Surely the oven will get better with time, as they tend to do, and considering the excellent pizzas that were turned out tonight, Tonda may soon give Sforno a run for its money.

Getting there is super easy. Just take the 60, 84, or 90 bus from the center, or hop on the train to Stazione Nomentana.

  • Oh yum! Almost drooling on my keyboard. Less than 3 months now until we hit Rome to actually try some of this deliciousness for ourselves!

    Be sure to book a table. Its just a matter of time before the word gets out and the place will be slammed.
    May I suggest heading to Gelateria Gori for desert. It’s a 10-12 min walk away and the gelato is amazing


  • Do you know if they’ll be open sometime between Aug 5-12? There’s no contact info or hours?

    Tonda will be open until Aug 13. The contact info is the phone number at the end of the post. I’m not sure what day of the week Tonda is closed but will find out and post later.

  • Tonda was delicious, but I think if I went back again, I wouldn’t get the cacio pepe pizza. It was good, but so salty and cheesy that I couldn’t eat more than half. I think maybe it would be good to share with someone and then have half of a different type to balance it out.

    @ricardo sorry for the confusion! they will be closed from around August 13 to the end of August then they will reopen. Tonda is open 7 days a week right now (they may add a day off in the future) and is only open at dinner.

    @jessica sharing the cacio e pepe pizza, ideally with someone who ordered a “light” pizza offers the best of both worlds. thanks for making the trip with me and for the gorgeous photos!!


  • I am really looking forward to this and but that means I only have a 2 day window to catch them as I fly in on the 10th and out by the 14th. Now how to deal with the problem of consuming a whole pizza by myself…. hmmm.

  • Pizza @ Tonda looks yummy — and cacio e pepe pizza? I’ll share one with you and Jessica for sure. This way we can taste 3 different pies. Hmmm….I feel that a trip to Roma is in my very near future. Remember, I only eat pizza in Italy (LOL).


  • Sure Mamma! Once I hit Rome I will post again the specific day I plan to go… I have narrowed it down to either Aug 10 sometime before dinner or Aug 11 lunch. If you ladies are free I would be glad to meet and share a pizza or three. I will be the only asian-looking glutton there.

    @ricardo oh no no, you need to prepare yourself for a trapizzino, a fiore di zucca, a suppli’, and a pizza…minimo!! :) i doubt tonda is open at lunch. most great pizzerias are only open at dinnertime. please dont miss it! unfortunately we are going to miss you. mamma p will be in the states (jersey shore, ovvi) and ill be in turkey!

  • Thanks so much for the recommendation! We made it out to Tonda last night and snagged the last non-reservation table, so definitely call ahead.

    I completely agree with Jessica- the cacio e pepe is best shared. It’s yummy but a bit much and very salty.

    The marinara was actually my favorite and the diavola had a great kick to it.

    We definitely got a funny look for not ordering tramezzini and after seeing them being carried to all the other tables, they did look tasty. Would be interested to hear if anyone tries them!

    Didn’t get to go to Tonda but did the rounds of Roscioli, Roscioli Forno, Forno Campo di Fiori as well as Volpetti and the gelaterias. The carbonara at Roscioli was excellent and the La Buratta just blew me away. I still have 3 days in Rome on the 28-30th and plan on Cacio e Pepe at trastever and the pizza at Pizzarium and 00100. Had the most fantastic salame with truffles at Volpetti! Can’t wait to be back there soon! Thank you for all the advice.

We are from St. Paul Minnesota in the United States but our Grandfather is from Italy . He came to the states when he was 13. How did you come up with the name Tonda? Hope to hear from you soon.     Hi Brenda, Tonda means “round” in italian, so the name of the pizzeria refers to the shape of the pizzas.
