It’s just a few days old, and already my recent piece for the NYT could use some editing! The subject, the neighborhoods north of the Vatican, has welcomed yet another gourmet destination. Vice Cafè, which opened Thursday, is the gelato franchise’s fourth location. I sat down with owner Fabio D’angelantonio back in December to hear about his plans for the new location.
“Vice Cafè will stick to the concept of the other three shops, in other words, offering gelato and savory snacks, but there will also be a menu of at least 30 types of espresso. In addition to that, we are going to have a more ample selection of pastries, including éclairs and mignon. Here [at the Via Gregorio VII branch] we have pastries, but a much simpler variety.
“We are in continual evolution. It’s important to know how to update and we are going to challenge our pastry chefs to create 3 or 4 new products, including gelato flavors, every month…The most important thing is to innovate and always look to improve and evolve.”
